Carrots

Carrots are one of my favorite foods. Here’s a great recipe to treat your taste-buds.

Carrot Cake Oatmeal Bites

Yield: 18-20 balls

Ingredients

1 1/2 cups rolled oats

1/2 cup shredded carrots, packed

1/2 cup peanut butter

1/3 cup raisins

1/3 cup chopped pecans

1/4 cup honey

1/2 tsp vanilla extract

1/2 tsp ground cinnamon

1/8 tsp ground nutmeg

1/8 tsp ground ginger

Instructions

In a large bowl, stir together all of the ingredients until well mixed.  Using your hands, shape into 1-inch balls.  Refrigerate for 1 hour.  Serve cold.

Notes

Store, covered, in the refrigerator for up to 5 days.
